Earlier this year, I spent an immersive week entirely dedicated to fermentation at the University of Gastronomic Sciences in Pollenzo, studying the science, history, and living traditions behind these living foods. I am bringing that wisdom straight back to our table for an evening celebrating shared labor and community.
In this hands-on workshop, we are leaning into the communal spirit of Kimjang. Together around the table, we will roll up our sleeves to chop, salt, and craft your very own custom batch of kimchi (all plant-based) to pack up, take home, and watch bubble into perfection.
The experience doesn’t end at the mixing bowl. From there, we will sit down to enjoy a curated menu featuring three additional dishes that showcase the bold, complex alchemy of other fermented products (recipes for which will be provided to all workshop participants).
Expect an unhurried, cozy evening of messy hands, deep flavors, and the kind of easy camaraderie that only happens when people gather around food.
Date: November 14th 2026
